Shaken not Stirred: The ‘Burlington Bertie’


If you are lucky enough to be at Glorious Goodwood this summer (30th July – 3rd August), you will probably come across the tic-tac men shouting “Burlington Bertie, one hundred to thirty!” The tic-tac is the bookmakers language of choice when it comes to busy race meets when colleagues may be some distance away.  They communicate via a secret sign language and they always make sure their hands can be seen in bright white gloves.

To celebrate this ancient tradition, ‘Best Barman in the World’ – Erik Lorincz, Head Barman at the American Bar at The Savoy London, has created a cocktail that will make sure that you always get the best odds.

Burlington Bertie

  • 45ml Vodka
  • 15ml Evangelista Ratafia Liqueur
  • 30ml Lemon juice
  • 15ml Sugar Syrup
  • 3 drops of Absinthe
  • Dash of egg white

Pour all the ingredients together in a cocktail shaker filled with ice cubes and give it a good shake.  Once completed, strain and pour into a coupette or martini glass, garnishing with a few petals of dried lavender.   Chin chin!
