This is David Enjalran, the owner and chef of L’Esprint du Vin in Albi, just after he was asked if he would like a second Michelin Star. The answer was this huge smile and “who wouldn’t”. David was awarded his first star in 2006, just two years after opening, for his artistic interpretation of French Classics.
